The Tachiuo Knife represents a harmonious collaboration between the esteemed chef Yoshinori Sono of Osaka's Tachijuen and the skilled knife artisan Yoshimi Koto. Sono, renowned for his expertise in Tachiuo cuisine, conceptualized the knife, while Koto meticulously forged it into reality, showcasing his precision and dedication to exceptional craftsmanship.

Measuring approximately 15 centimeters in length, the knife's blade is crafted with precision and resilience, making it suitable for various culinary tasks. From delicate sashimi preparation to precise filleting, this knife excels in versatility and performance.

While the knife follows a Western-style design with a stainless double-edged blade, Chef Sono has customized it to feature a distinctive single-edged configuration. With a 7:3 ratio favoring right-handed users, the modification enhances balance and precision, particularly during filleting tasks.

Each knife undergoes meticulous handcrafting by artisan Yoshimi Koto, resulting in a unique character for every piece. Slight variations contribute to the knife's charm, ensuring authenticity and quality craftsmanship.

The handle of the knife is crafted from Japanese natural wood, offering enhanced water resistance and durability, making it suitable for outdoor use and diverse culinary environments.

Finally, the engraving of "Kotoh" on the knife serves as certification, indicating that artisan Yoshimi Koto personally crafted the knife. This mark guarantees the authenticity and exceptional quality of each piece.
